By now I’m sure you’ve heard all the cool kids are juicing. Joy the Baker does it. Shutterbean does it. And so does Edible Perspective. Pretty much all my favorite blogging buddies. Although I don’t have a juicer myself, I’d still to think I’m a cool kid, too.

Juicing is basically a quick way to get loads of nutrients into your body at once. Hooray for health! The catch, though, is that the juicing mechanisms themselves can be super pricey and take up a lot of room in your kitchen.

Because we try to keep our kitchen equipment to a minimum, both for space and cost purposes, I don’t see us investing in a juicer any time soon. But that doesn’t mean I can’t enjoy fresh juice in the meantime.

To make this super tasty apple, beet, carrot, ginger juice, I simply blended it all up in a blender and then pressed it through a fine mesh strainer until I got all of the juice out. Then, I discarded the pulp and enjoyed my juicy juice.

This may sound a bit of work, but it’s really quite simple. It doesn’t take much more effort than it does to rinse say quinoa or fresh fruit. Plus, not buying a juicer saves you money and a bit of space in your kitchen. Not to mention, I hear juicers are a headache to clean after using. See? Things are working out for us already.

This juice is slightly sweet and perfectly balanced, with some serious kick from the ginger. If you’re not a ginger person I’d recommend either scaling it back or omitting it altogether. I, however, enjoy ginger both for its zing and health benefits, so I used a good amount. But play with the ingredients to get a taste you prefer; that’s part of the fun anyway.

Besides being delicious, this juice is also incredibly healthy with Vitamins A, K and beta carotene from the carrots, vitamin C and polyphenols from the apples, antioxidants and folate from the beets, and anti-inflammatory benefits from the ginger (among others). Some of the nutrients remain in the pulp, but all in all it’s a super healthy beverage that’s much better and fresher than store bought.

This was my first try and I intend to experiment with more flavors. Have any suggestions? I’d love to know.

Cuisine Gluten-Free, Vegan

  • 1 medium beet (rinsed, lightly peeled and quartered)
  • 1 medium apple (peeled, cored and quartered)
  • 1 Tbsp size piece of fresh ginger (skin removed)
  • 3 whole carrots (rinsed and peeled)
  • Unfiltered apple juice (optional)
  • Place all ingredients in a blender and blend until smooth, adding a splash of apple juice if needed to get it moving. I probably added about 1/4 cup (amount as original recipe is written).
  • Then, place a fine mesh strainer over a large bowl and pour the juice over. Use a rubber spatula to press the pulp down and squeeze all of the juice out. Let stand for 5 minutes so you get most of the juice.
  • Discard pulp and pour your juice into a serving glass. Drink immediately or chill for a bit. Will keep in the fridge for a day or so, but will taste best when fresh.

I’m Kelly, and I have a lazy liver. Yup, I said it.

My liver can’t always keep up with all the outside toxins it must process, so I try and do some regular liver cleansing. Here’s why and how I keep my liver nourished.

Why the Liver Needs Cleansing

Sadly, if you breathe air in this world, your liver may be overloaded.

There’s toxins in processed food, cleaning products, the air, plastics, cars, and the list goes on. There’s really no avoiding toxins, but there are ways of bolstering the liver so it can more easily remove these intruders.

There are extreme forms of liver cleansing fasting for several days and only drinking juice. I’m not a big fan of those strict diets, unless it’s doctor recommended for an extreme condition..

The liver works as a filtration system. It helps escort nutrients to where they need to go, helps eliminate toxins from your body, and keeps your blood clean and flowing well.

What are the benefits of drinking a beet smoothie?

Beetroot, or beet, is becoming known as a superfood that maintains heart health and blood pressure, supports brain function, aids digestion, and reduces inflammation.

Beets are said to reduce obesity risk and increase energy levels.

That said, I’m making it a point to eat more of this beautiful, root vegetable that I’ve always loved and used in my cooking.

This is exactly why I created this beet smoothie!

How do you prepare beets or beetroot?

Roasting, boiling, and grilling methods are probably the most popular ways to prepare beets.

I happen to love raw beets in salads where I simply shred them with a box grater, or grate them in my food processor.

I also run beets through my spiralizer for this Citrus Kale Beet Winter Rainbow Salad.

Can you blend raw beets in a smoothie?

Most definitely…that’s how I always make mine.

I loooooove my NutriBullet Pro 900 for everyday, single-serve, smoothies.

I also use it for milkshakes, salad dressings, chopping nuts, and grinding coffee (really fine!).

One of my fav gadgets of all time!

Vitamix is equally effective, especially if you’re making larger smoothie amounts beyond one or two servings.

Can you make a beet smoothie in a standard blender?

Technically yes, but a regular kitchen blender will leave your smoothies chunky and chewy.

They just don’t pulverize the plant fibers as effectively as high-speed blenders.

Beet smoothie or beet juice?

Both are very popular ways to get health benefits, but when it comes to drinking fruits and vegetables, I prefer blending over juicing across the board because I want all the fiber I can get.

Do you need to peel the beet for this smoothie?

No. But sometimes I do when the beet skin looks “dirty” to me, even after scrubbing the surface with a vegetable brush.

Beetroot Smoothie Ingredients

beetroot – Most widely known as “beets”. The beets are raw for this recipe…no cooking necessary.

apple – Any variety of apple will do the job for this smoothie recipe. The sweeter, the better, since there’s no added sugar to the recipe.

carrots – I to grate the carrots before adding them to the blender for my beet smoothie because they break down and puree faster and without lumps.

microgreens – I used sunflower sprouts for this recipe, but you can use any microgreens, or leafy greens ( kale or spinach).

ginger – Fresh ginger, not powdered, is a MUST for this recipe.

ice & water

This Beet Juice recipe is a healthy and nourishing drink that is so easy to make. It’s also refreshing and delicious!

Step One

The first step for any homemade vegetable juice is to gather all of your ingredients. I to wash and prep them ahead of time since that is the most time-consuming part of the whole process. Sometimes I will even prep my juice up to a couple of days before I actually make the juice.

Step Two

Grab a juicer or a blender. I prefer a masticating-type juicer over a centrifugal type, but whatever you have is perfectly fine, as long as you are comfortable using it. This is the juicer that I have and recommend.

You can also use a high-speed blender to make juice, but you’ll have to strain the pulp out if you use a blender. It’s also interesting to note that even using just one large beet will turn the juice red, no matter what other vegetables are included.

Step Three

The last step is to juice the beets and any other additional ingredients. I always to add a little bit of fresh lemon or lime to brighten up the beet juice. Carrots or apples are optional, but they will also add more sweetness to the naturally sweet beet juice.

Can I drink this juice everyday?

Yes, you can drink beet juice everyday as long as you don’t have any troublesome side effects, such as diarrhea.

What are the benefits of beet juice?

Most vegetable juices have the benefit of having a high antioxidant and vitamin content, especially when consumed immediately after making the juice. The benefit of juicing is that you don’t have to digest all of the fiber from the juice. Learn more about beet juice benefits.

Beet juice is a healthy and nourishing vegetable juice that supports detoxification and cleansing. It also happens to be absolutely delicious! Here’s how to make it at home.

  • 1 pound beets, washed with ends cut off
  • 2 pounds carrots, washed with ends cut off
  • 1 bunch celery, washed and broken into ribs
  • 2 lemons, peel cut off and quartered
  • 1 lime, peel cut off and quartered
  • 1 bunch flat-leaf parsley, washed
  • 1 Fuji or Honeycrisp red apple, chopped (optional, for extra sweetness)
  1. Wash produce and chop so pieces will fit into the feeder tube of your juicer.
  2. Feed the vegetable pieces through the juicer, alternating harder and softer textured pieces to aid in the juicing process.
  3. Serve immediately or store in the refrigerator in a highly-sealed container.

The juice is best when served within 48 hours of making it.

BLENDER INSTRUCTIONS: Chop your vegetables into 1-inch pieces for easier blending. Combine them in a high-speed blender with 1/3 cup of filtered water. Blend on high until the ingredients are relatively smooth. Squeeze the juice through a nut milk bag.

Beet and Ginger Detox Elixir

The first days of January pass quickly, with only a few hours of sunlight and a lot of awareness for every new sound, light, person and little joy of this young year.

A lazy sunrise is for meditation and setting up the digestive fire with turmeric tea, while sunset goes by slowly in glorious contemplation, with a ruby-shaded ginger elixir.

A favorite this winter, and inspired by one of Heidi’s Near and Far recipes, this is a drink for rooting into the new year and for nurturing the body’s cells to incite their natural detoxifying function.

I remember my mother used to give me fresh juice made of beets, carrots, and apples to drink in the evening, and it felt so comforting. The earthy taste of beets was perfectly balanced by the sweetness of the other ingredients, and it gave me a sort of positive energy.

Lately, I discovered this was one of the most powerful antioxidant combos, and I learned to experiment with ingredients for creating a different taste or more nourishing combination.

The base remained the same with an addition of a purifying herbal tea blend, and this strong ginger-spiked ruby elixir became my favorite drink for invigorating the whole digestive system.

I can’t think of a better vegetable to use as a base for a detox drink than the beet root. Alongside the vitamin and mineral concentration, especially folate, the antioxidant manganese, vitamin C, and essential potassium and magnesium, this humble vegetable carries a unique combination of phytonutrients called betalains, providing us antioxidant and anti-inflammatory protection.

Betalains are also involved in Phase II of the natural detoxification of your body, the metabolic step related to the activation of glutathione-S-transferase enzymes, which carries the water-soluble metabolized toxins throughout the system and excretes them afterward in the urine. These phytonutrients give the red-violet or the yellow color of beet roots.

Although carrots and apples still remain my favorite combination for balancing the earthy taste of beets, when it comes to detox, I to mix in some pungent ingredients for a good cleanse kick. I loved Heidi’s idea of spicing up this elixir with ginger, especially because of the anti-inflammatory and cancer-inhibiting properties of its active substance called gingerol.

Grapefruit is also a favorite, giving its high concentration of the antioxidant vitamin C, polyphenols, and lycopene, and also for its tart and tangy taste and delicate flavor. Sometimes I add a bit of lime juice for a refreshing twist, and maybe to prove that a detox drink doesn’t have to feel overwhelmingly nauseous, but more a treat for your body’s cells and taste buds.

  • 1 medium beet peeled and cut into quarters
  • 1 pink grapefruit peeled and cut into slices
  • 1 inch ginger knob peeled
  • 1/2 pomegranate seeds only
  • 2 cups brewed detox tea I usually use a mix of horsetail and elderflower, warm
  • Variation: add 1 tbsp freshly squeezed lime or lemon juice or the juice from half of a blood orange
  • Juice all the ingredients and mix the liquid with the detox tea. Drink immediately to get the maximum benefits from the fresh nutrients.

Some of the top foods to detox the body includes beets, ginger, lemon, apple, turmeric, chard, apple cider vinegar (used in this apple cider vinegar drink), spinach or other leafy greens and herbs, spirulina, and chlorella, to name a few. This beet juice recipe uses a few of them.

The first step to making any juice recipe is to make sure the ingredients are fresh. I suggest buying the produce within a day or two of using. Let’s dive into the healthy ingredients of this cleansing beet juice recipe!

Apple: I am a big believer in an apple a day keeps the doctor away! Apples are great for digestion and ginger, help to stimulate the digestive tract and rid toxins from the liver. Is if full of antioxidants and vitamin C to help build the immune system and ward off disease.

Carrots: Carrots are rich in beta carotene, fiber, vitamin D1, potassium and have high amounts of antioxidants. They are linked to improving eye-sight and lowering cholesterol. They add a delicious amount of fiber and sweetness to beet juice.

Ginger: Ginger is a root similar to turmeric and has been used for thousands of years as an anti-inflammatory agent and antioxidant. Lemon: Lemons are high in vitamin C and are well known for building the immune system and naturally healing  a cold and cough when mixed with honey. For this ultra-fabulous detox drink, I recommend using a juicer or blender. Personally, I use my vitamix constantly and love it. It purees foods no other blender.

If using a juicer, you can can skip the coconut water as an option. It is used in the blender to help it mix and add nutrients.

Add apple (with core removed and halved), beets (with skins removed and stems removed), carrots (peeled and stem removed), ginger (with skin removed), a whole lemon (slice off ends first and cut off all of the skin and rind), and coconut water. The juicer will discard the unnecessary parts. Yay!!!

If you do not have a juicer a REALLY GOOD blender is needed, aka, Vitamix.

For this version add apple (with core removed and halved), beets (with skins removed and stems removed), carrots (peeled and stem removed), ginger (with skin removed), a whole lemon (slice off ends first and cut off all of the skin and rind), and coconut water. Blend until smooth. Then use a nut bag or mess bag and separate the grindy fibrous parts from the liquid. Use a funnel to pour into two glasses, or one large glass.

In a Vitamix (high-speed blender or food processor) add water, beetroot, pomegranates, and apples. Process it on high until smooth.

Step 2

Optional Step: Strain the pulpy red smoothie using a sieve to have a seedless juice. Please note that the pulp in the juice is very healthy as it is loaded with fibers and nutrients.

Step 3

Delicious Beet Ginger Detox Juice is a blend of beets, apple, ginger, lemon and parsley.  This vibrant liver cleanse juice is loaded with antioxidants, vitamins and minerals and will stimulate the body’s natural detoxifying process.  


Beet juice is a powerful liver cleanser and it’s highly nutritious. Beets are high in betalains and other compounds that provide anti-inflammatory benefits.  For this liver cleanse juice,  we add apple, lemon, parsley and ginger for an incredible combination of flavors.

As I mentioned in my “Daily Detox Diet”, adding homemade fresh juice to your daily wellness plan is an easy way to boost your immune system.  This beet juice detox recipe is a favorite of mine and I make it often!


This 5 ingredient juice cleanse recipe uses fresh organic produce.

  • 2 large raw beets, peeled
  • 3-4 large Gala or Honeycrisp apples
  • 2 inch piece of fresh ginger, peeled
  • a large fistful of organic parsley
  • 1 organic lemon, juiced


  1. Place all of the detox drink ingredients in the juicer and juice.
  2. Pour over ice.
  3. Store in mason jars in the refrigerator.

Detox juice! Beet juice! This vibrant beet juice recipe with apple, lemon, ginger, and carrot is loaded with antioxidants, vitamins, and minerals. 

While I’m more of a smoothie girl most of the time (here’s a Green Detox Smoothie and here’s a Beet Smoothie), I believe juicer recipes have a place too. I to stick to juice recipes that aren’t too sweet, and are loaded with functional nutrition. This juicing recipe makes beet juice with apple, lemon, carrot, and ginger. It’s a detox juice that’s perfect for supporting the liver.

Ever since I shared my favorite Apple Cider Vinegar Drink last year, I’ve gotten more and more requests for healthy drinks.

If you’re me, and feel plain water can be boring, going broke on La Croix, and avoid sugary drinks and cocktails, you’ll love these healthy options.

Detox Juice Ingredients

As I’ve mentioned in my other “detox diet” recipes, foods don’t detoxify the body. There is no scientific evidence that beet juice will cleanse, rid our bodies of toxins, or undo damage from overindulging.

(1) Our organs (think liver, kidneys, skin) handle detoxification on their own. However, there are foods that can support those organs, and others that are harmful to them. I know I just feel so much better when consuming nutrient dense foods and beverages this one.

Beets have been used in natural medicine for many, many years. 

This detox juice beet juice recipe is similar to one I really enjoy from our local Whole Foods juice bar, called the D-Tox. All of the ingredients in this beet detox juice recipe have health-promoting properties. When juicing, although fiber is lost, you can get a higher concentration of their vitamins and minerals. 

  • Beets: Powerful antioxidants and vibrant color. 
  • Carrots: Beta carotene, antioxidants and Potassium. 
  • Apples: Contains pectin, which helps the body cleanse.
  • Ginger: Anti-inflammatory.
  • Lemon: Citrus fruits can help the liver produce detoxifying enzymes. 

Beet Juice Benefits

I absolutely love beets in all forms, from these Easy Pickled Beets to Roasted Beets in Foil and Without Foil, to my favorite Beet Burger and Beet Salad. To get all of this amazing root’s health benefits, using them raw and is a great way to go.

The bright red color of beets, and this detox juice recipe, is a giveaway that they are high in antioxidants. Beetroot may have even been used medicinally by ancient civilizations.

  • Blood Pressure Regulation. The high levels of Potassium in beets is thought to help regulate blood pressure. (3)

How to Make Beet Juice

Do you have to peel beets before juicing? That was one of my first questions when I began adding beets to juices and smoothies. The answer is, it’s up to you. You should peel beets if, you’re sensitive to earthy beet flavor, or your beets are not organic. 

To juice raw beets, simply toss them in your juicer with other ingredients. If you’re a juicing beginner, you might to start with beet-orange juice, which is sweeter than this version. 

Storing Fresh Juices 

  • It’s best to drink fresh juices as soon as possible to prevent nutrient degradation. 
  • If needed, store homemade juice in airtight glass jars in the refrigerator but drink within a few hours. 
  • I this beet juice served over ice. If it’s too strong, try adding a little water.

  • 1 red beet
  • 1-2 green apples, cored
  • 1 lemon, peeled
  • 1-inch fresh ginger, peeled
  • 3 medium carrots
  1. Remove the beet greens and save for another use (if it came with greens). If your beet is not organic, or you are sensitive to Earthy beet flavor, peel the beet with a vegetable peeler, otherwise there's no need to peel.

  3. Follow the manufacturer's instructions for juicing the ingredients into a glass.
