Whether it’s a bowlful of that big batch of Just-Keeps-Getting-Better Lentil Salad you made yesterday or a fortifying tofu and mushroom stir-fry that comes together on the stove in minutes, these are the quick lunch ideas and recipes we’re turning to get us through the rest of the day.

  • Think of this as a salad sandwiched between two slices of bread.
  • This deeply comforting, spice-forward Indian soup is deceptively simple, easy to pull off, and perfect over a bowl of white rice.

There is nothing more nourishing than giving our body real living nutrients – fresh and living fruits and veggies to energize and nourish us, especially during the busy workweek.

 Making our lunch from scratch is such a loving choice, no matter what diet or food philosophy one adheres to.

All the lunch recipes above are delicious, but some of my favorite work lunches have come from mixing and matching components I’ve had on hand in the fridge. Try skipping a recipe altogether, and meal prep one (or more) item from each of the categories below. Then, combine them to make delicious DIY grain bowls throughout the week!


Cook a big batch of grains on the weekend, and add them to salads and bowls all week long! If I’m craving a lighter lunch, I’ll meal prep a veggie “grain,” zucchini noodles or cauliflower rice, instead.

Customize a delicious, packable veggie box lunch by following this formula: a grain, a legume, kale, a roasted vegetable, a raw vegetable, and a pickled vegetable. Top with creamy tahini sauce.

  • Assemble bowls with a grain, the massaged kale, a legume, roasted vegetable, raw vegetable, and a fermented or pickled vegetable.
  • Drizzle generously with tahini sauce and sprinkle with sesame seeds. Serve with more tahini sauce on the side.

*To roast the vegetables, preheat the oven to 425°F. Toss with olive oil, salt, and pepper, and roast the carrots for 15 to 20 minutes, and the sweet potatoes for 20 to 28 minutes.

How do you lunch? For us, it’s simple. Seriously simple. It’s actually part of Alex and my strategy for eating healthy in the long-term.

You see: we stay simple on breakfast and lunch to save all our meal prep energy for dinner recipes! Besides, who has time to worry about lunch anyway? When you’re on the go or eating a desk lunch at the office, you need something quick and healthy to power through the day.

Our beef with most lunch ideas? They’re too involved! No one has time to cook an entire soup or stir fry, unless it’s leftovers. With that in mind, here’s our list of no-frills healthy lunch ideas! We’ve got lots of lunch ideas around here! Here are a few more of our favorites:

What to serve alongside

We offered a few “side” recipes for lunch, but here are a few more items that make these recipes into a meal:

A 5-minute healthy lunch idea! This simple chickpea salad is easy to throw together: the perfect healthy plant based desk lunch or quick fix dinner.


  • 15-ounce can chickpeas
  • 1/4 cup bell pepper, diced
  • 1/4 cup English cucumber, chopped
  • 1/2 tablespoon olive oil
  • 1/2 tablespoon red wine vinegar
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon smoked paprika
  • Fresh ground pepper
  • 1 pinch celery seed or fresh torn herbs (parsley, dill, basil, etc), optional
  1. Drain and rinse the chickpeas.
  2. Dice the bell pepper. Chop the cucumber (peel it if you’re using a standard cucumber; English cucumber doesn’t need to be peeled).
  3. In a bowl, mix together all ingredients. Taste and add salt as desired. Serve with crackers or pita triangles.
